Chicken/Turkey Meatloaf

Makes 8 servings

1 1/2 pounds ground chicken uncooked (or use ground
1/2 cup cracker crumbs
1 small stalk celery, optional
1/2 cup onion minced
2 cloves garlic minced
1/2 teaspoon ground cumin
1/2 teaspoon dried thyme leaves crushed
1 teaspoon salt
2 tablespoons vegetable oil divided

Preheat oven to 375 degrees.
Mix all ingredients except 1 tablespoon vegetable oil in a large bowl until well combined.
Shape into loaf.
Place in a loaf pan and pour remaining tablespoon of oil over loaf.
Bake 40-45 minutes, until top is browned and juices run clear when toothpick is inserted.
Let cool slightly before serving.
