1 box Farfalle pasta (bow ties)
1/4 c olive oil
2 c white onion, sliced
2 sprigs fresh thyme (divided)
1 c green bell pepper, diced
1 c red bell pepper, diced
1 c yellow bell pepper, diced
1 c water
salt to taste
pepper to taste
2 tbs fresh Italian parsley, chopped
Bring large pot of water to a boil.
Heat oil in large skillet over med-high heat. Add onions and 1 sprig of thyme. Saute 5 minutes.
Cook pasta according to package directions.
Add peppers and water to skillet, season with salt and pepper to taste. Saute an additional 10 minutes or until peppers are tender.
Drain pasta, add to the skillet and toss.
Sprinkle with remaining thyme and chopped parsley.
