Grandma Opal's Red Velvet Cake

2 1/2 C flour
2 TBS cocoa
1 tsp salt
1 1/2 C sugar
1 tsp baking soda
2 eggs
2 oz. red food coloring (I've made it with 1 oz and it is still Very red)
1 1/4 C oil
1 C buttermilk
1 tsp vanilla
1 tsp vinegar

Blend eggs & oil. Add dry ingredients mix until smooth. Add buttermilk, food coloring, vinegar & vanilla. Bake in a greased & floured 9 x 13 pan at 350 for 30 min.

Cream Cheese frosting:
4 oz cream cheese, softened
2 C powdered sugar
1/2 C margarine/butter
1 tsp vanilla

Mix together until creamy. Frost cooled cake.
