Creamy Ham Fettuccine Recipe

This is good with leftover roasted chicken. Or with a shredded "deli roasted" chicken in place of the ham.

1 package (12 ounces) fettuccine
3 cups cubed fully cooked ham
2 cups frozen peas, thawed
2 cups grated Parmesan cheese
1 cup heavy whipping cream

In a large saucepan, cook fettuccine according to package directions; drain. In the same pan, add the ham, peas,cheese, cream and fettuccine.
Cook and stir until heated through. Yield: 6-8 servings.

Au Gratin Ham and Potatoes Dutch Oven Recipe

4 Tbsp butter or margarine
1 onion
3 Tbsp flour
2 cups milk
Seasoned salt and pepper
1-1/2 cups cooked ham
3 cups potatoes
1/2 cup cheese
2 Tbsp fine bread crumbs

Mince onion.
Dice ham.
Dice potatoes.
Grate cheese.
Preheat dutch oven to 325 degrees.
Melt butter and saute onion until translucent.
Blend in flour.
Gradually add milk, stirring constantly until thickened.
Add pepper and seasoned salt.
Mix in ham and potatoes to coat well.
Sprinkle cheese and bread crumbs on top.
Cover and bake at 400 degrees for 20 minutes.
Might take longer when doing it on coals.

Velveeta & Ham Chowder

1 large onion, chopped. Cooked in 1 TBS oil, and drained
3 cups milk
3/4 lb. (12 oz.) Velveeta Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
3 cups frozen broccoli
1/2 lb ham, chopped
1 15-oz can corn, drained or 1 1/4 cup frozen corn
salt and pepper

Add cooked onions, milk and Velveeta to crock pot (set on high). Stir occasionally, until cheese is melted. Takes about 30 minutes. Turn to low before adding the rest of the ingredients.
Add broccoli, ham, and corn.
Simmer on low for 2-5 hours. Stir from time to time to make sure you don't burn milk and cheese.
Add salt and pepper if needed before serving.

Hay and Straw

16 oz linguini
2 cups julienned fully cooked ham
1 TBS butter or margarine
3 cups frozen peas
1 1/2 cups shredded Parmesan cheese
1/3 cup heavy whipping cream

Cook linguini according to package directions. Meanwhile, in a large skillet, saute ham in butter for 3 minutes. Add peas and heat through. Drain linguini; toss with ham mixture Parmesan cheese and cream. Serve immediately. Serves 8

Egg Souffle

6 slices of white bread
8 oz. Cubed ham
8 oz. Sharp cheddar cheese
¼ c. butter
½ tsp. dry mustard
½ tsp. salt
3 eggs, beaten
1 pint half & half
1 ½ c. crushed potato chips

Break bread up into bit size pieces, crusts too! Cube ham and cheese. Stir together. Pour melted butter on top. In a separate bowl, beat the eggs, add half & half, salt, and dry mustard and mix. Put break mixture in a 9 x 9 pan. Pour egg mixture over the bread mixture. Cover with foil. Refrigerate overnight. Remove from refrigerator 1 hour before baking. Put potato chips on top. Replace foil and bake at 350 degrees for 1 hour. Serves 6 generously.

*Double the recipe for a 9 x 13 pan.
