Red Flannel Hash with Eggs

Important note: you have to make Corned Beef with Veggies at least the day before you want to make Red Flannel Hash with (or with out) Eggs. I also do not include beets in my hash, since I don't like them!






Left over Corned Beef with Veggies
butter
salt and pepper
6 eggs

Dice up your left over Corned Beef with Veggies.
Add a TBS of butter to frying pan, the corned beef will give off some of it's fat as you fry it up.
Add diced up meat and veggies to frying pan, add salt and pepper to taste. Don't move it around too  much, it will become a mushy mess.
When meat and veggies are caramelized, make 6 ''wells" with a spoon to crack eggs into.
Crack an egg into each "well", salt and pepper each egg to taste. Cover the pan for 5-10 minutes, depending on how runny or firm you like your egg yolk.

Irish Soda Bread


4 cups (16 oz) of all purpose flour
1 teaspoon baking soda
1 teaspoon salt
14 oz of buttermilk

Preheat the oven to 425 F. degrees.
Lightly grease and flour a cake pan.
In a large bowl sift and combine all the dry ingredients.
Add the buttermilk to form a sticky dough.
Place on floured (use about 1-2 Tablespoons, at most) surface and lightly knead (too much allows the gas to escape)
Shape into a round flat shape and place in round cake pan and cut a cross in the top of the dough (see photo).
Cover the pan with another pan and bake for 30 minutes (this simulates the bastible pot or Dutch Oven used to bake Irish Soda Bread).
If  you have a Dutch Oven then just lightly oil it and place the dough once shaped and cover.
Remove cover and bake for an additional 15 minutes.
The bottom of the bread will have a hollow sound when tapped so show it is done.
