Terrific Pork Tenderloin

2-3 1-lb pork tenderloins
1 tsp season salt
1 tsp garlic powder
1 (4oz) can diced green chiles
2 (10oz) cans cream of celery soup
rice cooked

Place tenderloins in sprayed oval slow cooker. Season with season salt and garlic powder.

Combine green chiles and celery soup in bowl and spoon over tenderloins, covering completely. Cover and cook on low for 8 hours. Serve over rice.
Serves 6-8

Crock Pot Chicken Tortilla Soup

1 can (10 3/4 ounces) Cream of Chicken Soup
1 can (10 3/4 ounces) Fiesta Nacho Cheese Soup OR Cheese Soup
2 soup cans milk
1 can (about 4 ounces) chopped green chiles
1 cup chopped cooked chicken
tortilla chips

Stir the soups, milk, chiles and chicken in a 3 1/2-quart crock pot.
Cover and cook on LOW for 5 to 6 hours.
Place a few tortilla chips in each serving bowl. Ladle the hot soup over the chips and serve immediately.

For a thinner soup, add more milk. Recipe may be doubled.

Tip: Substitute 2 cans (4.5 ounces each) Chicken Breast in Water, drained, for the cooked chicken.

Cheesy Chicken Enchiladas

Your family will never know they're enjoying a lightened meal.

* 2 1/2 cups chopped cooked chicken breast
* 2 cups (8 ounces) pre-shredded reduced-fat 4-cheese Mexican blend cheese
* 1 2/3 cups plain low-fat yogurt
* 1/3 cup butter, melted
* 1/4 cup chopped onion
* 1 teaspoon minced garlic
* 1/4 teaspoon freshly ground black pepper
* 1 (10 3/4-ounce) can condensed reduced-fat, reduced-sodium cream of chicken soup (such as Healthy Request), undiluted
* 1 (4.5-ounce) can chopped green chiles, drained
* 8 (8-inch) flour tortillas
* 1 tablespoon canola oil
* Cooking spray
* 1/2 cup (2 ounces) finely shredded reduced-fat sharp cheddar cheese
* 1/4 cup chopped green onions

Preheat oven to 350°.

Combine first 9 ingredients in a large bowl. Remove 1 cup chicken mixture; set mixture aside.
Heat a large skillet over medium-high heat. Working with 1 tortilla at a time, brush oil over both sides of tortilla. Add tortilla to pan; cook 5 seconds on each side or until toasted and soft. Remove from pan; arrange 1/2 cup chicken mixture down center of tortilla. Roll jelly-roll style; place filled tortilla, seam side down, in a 13 x 9–inch baking dish coated with cooking spray. Repeat procedure with remaining 7 tortillas, remaining oil, and remaining chicken mixture. Spread reserved 1 cup chicken mixture evenly over enchiladas. Cover and bake at 350° for 20 minutes. Uncover; sprinkle evenly with cheddar cheese and green onions; bake an additional 5 minutes or until cheese melts.

Southwestern Pasta

16 oz. Penne
1 can(14.5 oz) black beans, rinsed and drained
2 TBS vegetable oil
1 med onion chopped
1/2 cup chunk-style salsa
1 tsp chili powder
1 can (4 oz) green chilies,
1 tsp cumin drained
1 tsp coriander
1 tomato chopped
1 lb. ground beef
1 can (11 oz) whole kernel corn, rinsed and drained
1 cup sour cream
1/2 cup grated cheddar cheese
1/4 cup coarsely chopped fresh cilantro

Cook pasta according to package directions. Meanwhile heat oil in large pot/dutch oven over medium heat. Add onion, chili powder, cumin, and coriander and saute for 3 minutes, until soft. Add meat and brown- about 8 minutes. Drain pasta and stir into pot along with corn, beans, salsa, chilies, cheese, and tomato. Serve with cilantro and sour cream. serves 4-6
