Baked Penne

Foodie Friends Friday

1 lb. Penne Pasta
1 onion (optional)
1 lb. Ground beef
2 jars Spaghetti Sauce
8 slices Sliced Provolone
1 1/2 c. Sour cream
1 16-oz Cottage Cheese
8 oz. Shredded Mozzarella
2 T. Grated Parmesan
Boil Pasta according to package. Fry hamburger with onion, drain. Add Spaghetti sauce and pasta to meat and onion, stir well. Put 1/3 of mixture in 9X13 pan. Layer provolone cheese then sour cream blended with the cottage cheese on top. Add another 1/3 layer pasta then add mozzarella, then pasta sprinkle Parmesan on top. Bake 350 degrees for 30 min.

Au Gratin Ham and Potatoes Dutch Oven Recipe

4 Tbsp butter or margarine
1 onion
3 Tbsp flour
2 cups milk
Seasoned salt and pepper
1-1/2 cups cooked ham
3 cups potatoes
1/2 cup cheese
2 Tbsp fine bread crumbs

Mince onion.
Dice ham.
Dice potatoes.
Grate cheese.
Preheat dutch oven to 325 degrees.
Melt butter and saute onion until translucent.
Blend in flour.
Gradually add milk, stirring constantly until thickened.
Add pepper and seasoned salt.
Mix in ham and potatoes to coat well.
Sprinkle cheese and bread crumbs on top.
Cover and bake at 400 degrees for 20 minutes.
Might take longer when doing it on coals.

CHICKEN TORTILLAS CASSEROLE

1 whole chicken cooked and shredded
1 cup milk
12 corn tortillas quartered
1/2 cups chopped olives
1 can cream mushroom soup
1 can cream chicken soup
1 can chopped green chiles
1 lb grated cheddar cheese

mix soups, milk, chiles, and olives. Butter 13x9 baking dish. Add a small amount of broth or water. Layer tortillas, chicken, soup mix, then cheese. Repeating until all is gone. Bake 1 hour at 325.

El Dorito Casserole

1 and 1/2 lbs of hamburger
1 can chopped olives OPTIONAL
1 can diced chilies
1 large cottage cheese
1 large sour cream
1 can tomato soup
1 packages of taco seasoning
2 bags of Doritos (your favorite flavor)Large Grab Bag size or one regular bag

Combine cooked hamburger, tomato soup,olives,and taco seasoning in pan.
Combine sour cream,cottage cheese,green chilies,dash of garlic salt in a bowl.
Crush bag(s) of Doritos
In casserole dish layer doritos on bottom,then a layer of hamburger mix,then layer of cottage cheese mix,repeat.
Top with dorito chips and cheese.
Cover with foil.
Bake 375 for 25 to 30 min. Remove foil and bake an additional 5 min to make top crisp.

Beef and Bean Burrito Skillet

1 lb. lean ground beef
1 pkg. (1-1/4 oz.) Taco Seasoning Mix
1 can (19 oz.) kidney beans, rinsed
1 cup Thick 'N Chunky Salsa
1 cup water
4 flour tortillas (6 inch), cut into 1-1/2-inch pieces
1 cup Mexican Style Finely Shredded Four Cheese
1/3 cup Sour Cream
1 large green onion, chopped

BROWN meat in large nonstick skillet on medium-high heat; drain.
ADD seasoning mix, beans, salsa and water; stir. Bring to boil. Simmer on medium-low heat 5 min.
STIR in tortillas; top with cheese. Cover; let stand 5 min. or until cheese is melted. Top with sour cream and onions.

Top with your favorite Mexican-style toppings, such as shredded lettuce, chopped tomatoes and/or chopped avocados, just before serving.

6 French bread slices, cut in cubes
2 cups grated cheddar or Colby jack cheese
1 cup cooked, cubed ham
1/4 cup chopped green bell pepper
1/2 cup finely chopped onion
1 - 6 oz. can Mushrooms, drained
6 eggs
3 cups milk
Salt & Pepper to taste

Spray 13x9 baking dish with nonstick spray. Mix bread, cheese, ham, bell pepper, onion & mushrooms. Spread in baking dish. Whisk eggs, milk, salt & pepper and pour over top. Cover dish with foil and refrigerate overnight. Bake, uncovered, at 350 for 45 minutes. Makes 8-10 servings. Heats up great as leftovers!

Overnight Breakfast Casserole

Makes 8 servings

30 ounces hashed brown potatoes, thawed
1 pound sausage browned and drained OR use cut up ham OR cooked, crumbled bacon
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
8 large eggs 
2 tablespoons mustard prepared
2 cups milk of heavy cream (I have milk on hand more often)
2 cups cheddar cheese shredded
4 small scallions thinly sliced


Place potatoes in 13x9 pan, stir in sausage and 1 c cheese.
Combine eggs, seasonings, mustard and cream or milk in a blender jar, whip up and pour over potatoes.
Sprinkle with cheese and scallions.
Cover with foil
Refrigerate over night.
Bake covered at 350 degrees for 45-60 mins. Until eggs are "set" in the center of pan.
Remove foil for 15 mins more to brown top.

Mix-ins (Optional): 1 cup of bell peppers (diced,and sauteed). 1 4-oz can green chilies. 2 cups sauteed mushrooms. Top casserole with jalapeno slices. 2 cups broccoli florets (steamed and diced). Really almost anything you want to add to it you can.

Egg and Sausage Bake

8-10 eggs, beaten
2 c. milk
2 slices bread—no crusts and diced
1 tsp. Salt
1 tsp. Dry mustard
1 lb. Sausage—browned
1 tbsp. Chopped onions, sautéed
1 tbsp. Chopped green pepper
mushrooms

Combine all ingredients. Bake at 325 degrees in 9 x 13 pan for 45-60 minutes.

*Best if made the night before.
