Berry-Banana Freezer Pops

2 packages (10 ounces each) frozen strawberries in syrup, slightly thawed and undrained
1 container (6 ounces) Yoplait® Original strawberry yogurt
1 small banana, mashed
10 wooden sticks with rounded ends (Can be found in most craft supply stores)

1 Place strawberries, yogurt and banana in blender. Cover and blend until smooth 2 Pour slightly less than 1/2 cup fruit mixture into each of ten 6- to 8-ounce freezer pop molds or paper cups. Insert stick into each pop. If using paper cups, place on cookie sheet. Freeze at least 8 hours.

Tips

For a different flavor, try frozen berries with a matching berry yogurt and the banana.

Strawberry-Lemonade Ice Cream

This is a to-die-for family favorite!

1-qt (4 C) milk
1 12-oz can evaporated milk (NOT sweetened condensed)
1 C whipping cream
3 C sugar
1/2 C frozen lemonade concentrate (yellow or pink lemonade)
4 C fresh (OR frozen thawed and drained) strawberries, washed, culled and mashed with a potato masher
2 large, ripe bananas, mashed with potato masher

Pour all into ice cream maker at once.
Follow maker's directions.
And enjoy!!

Banana Bars

This is a great alternative to making bread or muffins when you have very over-ripe bananas to use up.

Bars
1/2 c milk
1 1/2 tsp lemon juice
Add lemon juice to milk, stir and set aside
3 eggs
1 1/2 bananas
3/4 c shortening
1 1/2 c sugar
2 1/4 c flour
3/4 tsp baking soda
3/4 tsp salt

Cream together eggs, bananas, shortening and sugar. Add milk (butter milk) and stir.
Sift together the rest of the dry ingredients and add to banana mixture.
Pour batter into a well greased 15x17 jellyroll pan.
Bake at 350 degrees for 20 minutes, or until toothpick comes out clean.

Make icing while bars are cooling for 10 minutes.

Icing
2 tbs butter, softened
2 c powdered sugar
1/4 tsp salt
1 tsp vanilla
1/2 banana

Beat together till smooth and ice bars while still warm.
When cooled completely and icing is set up, cut into bars with plastic knife and enjoy!

Fruit Salad with Banana Cream Dressing

6 ounces vanilla-flavored yogurt
1 1/2 medium bananas, cut into pieces
1/2 cup orange juice
1/4 cup pineapple juice, drained from can
1 cup pineapple chunks drained, juice reserved for dressing
1 cup seedless green grapes or combination of red and green
3/4 cup strawberries sliced
1/2 cup blueberries washed

Combine yogurt, bananas and juices in blender until
creamy.
Place fruit (any combination you wish if you would like
different fruits) into large serving bowl.
Toss with dressing and chill for 1 hour before serving.
